White Mint Cocoa

white hot chocolate with peppermintEven the whipped cream topping in this recipe is minty. The white chocolate is so much more mellow than dark, but the mint really adds a fresh spark to this hot chocolate. Ideal for Christmas.

8 oz white chocolate
3 1/2 cups milk
6 hard peppermint candies
1/2 tsp peppermint extract
2/3 cup whipping cream

Crush the mint candies finely, and beat in with chilled whipping cream. Beat until you have stiff peaks. Chill for about an hour while you make the hot chocolate.

Chop chocolate. Heat milk in a saucepan until just simmering. Stir in chocolate, and whisk until smooth and melted. Add mint extract and mix until combined.

Serve hot chocolate into mugs and top with a dollop of mint whipped cream.

Serves 4.
